茶可以說是雅俗共賞,老少皆宜。只需以水泡之,便能沏出香來,但若以茶作為配料入菜,那要怎么才能“吃”茶香呢?還別說,茶葉做菜樣式繁多,不過大概歸結為四種:將新鮮茶葉與菜肴一起烤制或炒制,是為茶菜。在茶湯里加入菜肴一起燉或燜,是為茶湯。將茶葉磨成粉撒入菜肴或制成點心,是為茶粉。用茶葉的香氣熏制食品,是為茶熏。所以現在來說“吃茶”工藝已經相當純熟了。

在牟定有一道風味獨特的茶菜,來吃出一抹茶香,這道菜名字叫“慶豐茶葉肉”。慶豐茶葉肉選用高山生態優質新鮮采摘的茶葉嫩葉,經過篩選,用甘甜的山泉水進行泡洗,精選新鮮五花肉切片,下油,先放入茶葉至油湯色金黃,撈起茶葉,再放入五花肉炸至肉質金黃,即可撈起上桌。
